I found these coconut biscuits at the international store and knew I wanted to make something with them. This is put together like a traditional banana pudding: cookie base, texture (banana), pudding, cookie top. This is made with coconut biscuits, toasted coconut mixed with a combination of blended cottage cheese, sugar free vanilla pudding mix, and fat free whipped topping, then topped with more coconut biscuits and toasted coconut. Whole pan is 1,573 (damn cookie calories!), but when split into nine servings, using the cookies as a guide, it’s ~175 calories. Not too terrible in my opinion for a sweet treat!
