Breakfast: 241 kCals

I drank most of before picture, Breakfast Blend kcup (5 kcal) with sugar free french vanilla creamer, powdered, (15 kcal);

Omelet… crepe… thingy… it’s like an omelet but thin and crispy;

Made with 3Tbsp or 46g liquid egg whites (25 kcal), scrambled with 1 large egg (72 kcal) and a bit of salt (I use about a quarter of a tsp). Let that sit for up to 15 minutes before putting in the pan. Spray pan with Pam or whatever cooking spray enough to coat the whole bottom (27 kcal). Pour in the egg mixture, and roll so it covers the bottom of the pan. When it’s firm enough (took mine 1minute 32 seconds) flip it. Put 14g fat free cheddar cheese (23 kcal) on half of the omelet, fold the other half over. Let one side cook (47 seconds for mine), flip it over and cook the other side (same).

Lunch: 385 kCals

2 Butterball turkey sausage patties (110 kcals), 85 grams southern hash browns (70 kcals), cooked with cooking spray again, a bit over 1 second spray (12 kcals), then add 14g fat free cheddar cheese (23 kcals) for cheesy potatoes. Served with 20g whole grain quick oats (75 kcals) with 1/3Tbsp of salted butter (35 kcals), 340 ml (11.5 oz can) Original v8 juice, because I am a salt addict (60 kcals).

Dinner; Nacho Party! With dessert! 505 kcal

About a 1.5 cup iceberg lettuce… I don’t weigh lettuce, sorry (10 kcal), 2 medium Campari tomatoes (12 kcals), 28 g fat free shredded cheddar cheese (45 kcals), 30 g Daisy light sour cream (35 kcals), 32g (1 bag) Quest taco flavor protein chips, (140 kcals), with my own taco meat recipe I’ll put at the end (226 kcals),

Dessert: Jello sugar free pudding cup (30 kcal)

Drink: 12 oz Coke Zero (7 kcals)

Snack: Yasso Bar, Cookie Dough flavor (100 kcals)

Taco meat recipe: 870 kcals; 4 servings

1lb Jennie O ground turkey 97/3 (680 kcal)

3 mini bell peppers, red, (27 kcal)

3 mini bell peppers, yellow, (25 kcal)

1 serrano pepper (2 kcal)

2 tbsp I can’t believe it’s not butter light (35 kcal)

50g homemade Taco seasoning (90 kcal)

Garlic (I don’t measure garlic, it’s about 7 kcals)

1/2 tsp chili powder (4 kcal)

About 1/4 cup water

Heat the not butter in a saute pan while you form the ground turkey into 4 patties. Sear them in the not butter.

While heating the meat, dice your bell and serrano peppers.

Break up the patties, add the peppers and garlic, and continue to crumble the meat to desired consistency. When the meat has browned, add the other seasonings and water. Lower heat and simmer till it’s done.

Divide into 4 equal servings.
