


This chicken fajita bowl was tonight’s meal. Super filling, nutritious, and high protein!
I cooked the chicken in a bit of olive oil, then added the coregtte and peppers to the pan. Once the veggies softened, I added some fajita seasoning, a little bit of tomato paste, and a splash of water. When everything was coated and cooked through, I added to a bowl with some pre cooked quinoa, sweetcorn, and a crumble of feta.
